The bistro cut ties at the waist and falls to around knee level, leaving the chest and arms free. It is front-of-house workwear rather than kitchen protection: waiters, baristas and counter staff, where the apron is part of the look as much as a working garment.

White shows everything, which is the point in a service role. Budget for enough that a marked apron can be swapped mid-shift.
