A paring knife is for work done in the hand rather than on the board: turning vegetables, coring, trimming and peeling. The short blade gives control that a cook’s knife cannot.

Forged construction with a bolster, which on a small knife mostly adds durability at the heel where paring knives usually fail. Hand wash and dry.
