A convection oven circulates hot air with a fan, which bakes more evenly and faster than static heat. Mechanical controls mean dials rather than a digital panel — fewer things to fail, and easier to operate under pressure, which is why many kitchens still prefer them.

The timer has automatic shut-off at the end of the cycle. The Prima Mini is the small unit in the range, for cafes, delis and sites with limited bench space.
