Boards stored flat in a stack stay damp between the faces, which is where bacteria survive. Standing them on edge lets both sides dry and keeps air moving around them, which is the whole point of the stand.

It also keeps a colour-coded board set separated and visible, so the raw meat board is not the one someone reaches for to chop salad.
