Hood-type pass-through dishwasher. Racks slide in under a lifting hood, wash, and slide out the far side, so dirty and clean sides of the wash-up never cross.

This is the format for a kitchen where warewashing runs continuously through service rather than in batches at the end. Lifting the hood is faster than opening and reloading a door machine, and the throughput difference over a long service is substantial.

It needs the space either side for landing tables, a hot water supply and a drain in the right place. Plan the wash-up layout around the machine rather than trying to fit the machine into an existing corner.
