Pass-through means racks enter one side and leave the other, which keeps the dirty and clean ends of the wash-up separate. That separation is a hygiene control as much as a workflow one, and it is the main reason this format is specified in larger kitchens over a door machine.

Installation needs hot water, drainage, and landing tables either side. Get the water hardness tested before commissioning, since scale is the main cause of premature failure and it drives both your dosing and your service interval.
