This is a waterproof apron, not a fabric one. Where a cotton apron soaks through and holds what it absorbs, PVC sheds liquid entirely and wipes down rather than going to the laundry. For boning, filleting and anything wet, it is the correct garment and a fabric apron is not.

White because it shows contamination immediately, which is what a food safety inspection looks for.
