Pressure frying cooks sealed under pressure, which drives moisture into the product rather than out of it and cuts cook times substantially against open frying. It is the method behind most commercial fried chicken operations, and it is not interchangeable with a standard fryer.

The lid seals under pressure, so operator training and a maintained gasket are essential. Requires extraction above and a dedicated supply. Confirm your site can accommodate the pressure vessel before ordering.
