Gas decks recover heat quickly and keep working through a power outage, which is why they remain common in high-volume pizza production. Three decks allow three products at three temperatures simultaneously.

Requires a certified gas installation by a registered installer with a compliance certificate on completion, plus extraction above. Gas connection quoted separately.
