Description

Floor-standing bain marie with a heated closet built into the base. The wet wells hold plated or bulk food at service temperature on top, while the closet below keeps plates, bowls or backup trays warm, so a cold plate never kills a hot dish on the pass.

Suited to a hotel breakfast line, a canteen or a function venue running continuous service rather than short bursts. Needs a level floor, clearance behind for the element housing, and a dedicated circuit.

Fill the wells with water before switching on. Running the elements dry is the most common way these get damaged.
